My 2 cents worth (I'm no admin or anything):

If the build process hasn't changed too much, you could submit a script
that by default builds the stable version, but is smart enough to build
the unstable if the user sets VERSION in the environment (and you could
mention that in the README).

If the build process is identical, putting something like this in the
script (if you don't already have it) would be enough:

VERSION=${VERSION:-1.2.3}

That's a standard thing to do already, the only non-standard thing you'd
be doing is putting a comment in the README.
